Prep the smoked sausage, peppers, onions and garlic.
Mix the chili powder, smoked parpika, cumin, mustard powder, garlic powder, onion powder,
and pepper together into a spice bowl. Set aside.
Combine the spice mix thoroughly with the ground beef/turkey,
smoked sausage, and chorizo in a mixing bowl.
Using a pan, melt some butter and use it to sear the ground meat, making sure to not add too much
to the pan at one time. Set aside the seared meat.
Using a separate pot that we will use to cook the chili, melt some butter in the pot.
Add the onions and the peppers to the pot and cook until the onions are slightly translucent.
Add garlic to the pot and cook until fragrant.
Place all of the ground meat set aside into the pot, stirring together
the ingredients inside the pot.
Add the kidney beans, crushed tomatoes, chipotles, sun dried tomatoes, beef stock,
and stout beer to the pot.
Set your stove to medium-heat and stir occasionally to ensure that the ground meat is
thoroughly cooked. This part may take an hour, depending on
your stove.
Add salt throughout the cooking process, to taste.
